Abel’s cuisine is influenced by an incredible range of products from the sea and the fertile Mediterranean valleys. The great mountainous Basque Country or the beautiful Bay of Angels represented by Nice, the capital of the Côte d'Azur, has led Abel to an amazing clash between coastal cuisine dominated by fish seafood or inland cuisine with fresh meat, hams, vegetables, fruits, freshwater fish.
The French and Spanish influence is what leads this cuisine, with a difference between the cuisine of either side of the modern border; Abel has been quick to absorb new ingredients and techniques from Greek and Mediterranean cuisine from their own trade and exploration links.

From Sous-chef position at Gordon Ramsay’s Foxtrot Oscar restaurant to awarded best U.K restaurant in heart of London Barrafina as Head Chef, Javier has also worked for several luxury catering services in the world such as Silverstone F1 Grand Prix in Qatar for the QNCC (Qatar National Convention Center), for the WPC (World Petroleum Congress) or the United Nations convention.
Chef Javier successfully led and managed several talented chefs, which he has decided to bring into Abel to set up the concept bringing quality and consistency.
